Formerly the home of Gastro Park and Etelek, experienced chef Opel Khan and his daughter Lucinda, who served as sous chef, secretly opened the doors of Métisse in mid-2019, pre-pandemic. The seasonal French-inspired menu changes, but there is usually a meat and vegetarian tasting menu to pick from, with vegan and gluten-free options available. It is quietly one of the most outstanding degustations currently being served in Sydney.
Bangladeshi-born Opel is passionate about sustainable cuisine and a zero-waste kitchen, which is exactly the type of cooking and culinary ingenuity we should be applauding right now. The "Texture of Tomato" is a regular feature and the standout of the Métisse menu. This incredibly outstanding dish is totally made of tomato (no waste) and takes three days to prepare. "At Métisse, the Texture of Tomato is the lynchpin of the sustainable luxury concept," says Opel.
