Instead of an à la carte menu, customers are now guided on a five-course journey centred on locally sourced seasonal produce, with the option to add distinctive dishes.
You can be fed Goolwa pipis with XO sauce and warrigal greens along the way, or dainty skewers of grilled kangaroo set on a bed of smouldering juniper. Every course is delivered with a dramatic flourish, giving the meal a feeling of occasion without the formality associated with fine dining. While Hastie's unique dry-aged steak has gained him a cult following, Firedoor is about much more than meat. Ignore the hype, put your faith in the chef, and take in the performance.
