Each course of the brand new dégustation menu is brought by composed waitstaff who never miss a beat in an extremely contemporary yet pleasant glass "box" on Pyrmont Bay. To begin, try a crisp wafer of chicken skin with diced raw scallop and nasturtium flowers, or a cool spiral of coral trout sashimi with honeydew melon and cucumber. Ingredients like bush tomato, paprika, and white sesame take deliciously al dente tagliolini or agnolotti in a whole new direction, but find balance with classic yet considered wine pairings from throughout the world.
