Why to visit Santo Palato

 The menu caters to those with more carnivorous appetites; in fact, the restaurant is part of a larger cultural revival in which offal is appearing on menus throughout the capital. Tripe, sweetbread, and tongue appear alongside more palatable classics like Amatriciana and Genovese at Santo Palato. Because it's a popular spot, make a reservation well in advance.

Santo Palato, with its tiled floors and tangerine-painted walls, appears to be a retro trattoria, but it is actually a relatively new kid on the block and a favourite of Rome's young creatives. Sarah Cicolini, a rising star, won fans for her yolky carbonara recipe, but it is her use of offal that has gotten the most attention. Menu items such as chicken giblet and liver omelette or rigatoni with pork jowl and pecorino are created daily. This is a high-quality casual dining establishment that should be appreciated.

Special Tip

Definitely try the pomodori al riso, which are hollowed-out tomatoes filled with rice and baked with potatoes until they are perfectly withered and nearly caramelised.
