The Santoro restaurant, which is housed in one of the island's most opulent hotels, has a breathtaking view of Skaros Rock and the submerged caldera's sea. If you choose a table on the lower level below the enticing infinity pool, you'll have front-row seats for the legendary Santorni sunset.
If the superb a la carte menu leaves you undecided, there is only one option: the tasting menu. It's exactly what you'd want to eat in this breathtaking waterside setting, designed to take you on a culinary journey that combines tradition with contemporary flavours.
The tasting menu can be wine-paired for an extra fee, or you can wash it down with a bottle of crisp Assyrtiko from one of the many local wineries, Gaia Estate being one of our favourites.
The seabass ceviche is a flavour explosion, with the fresh taste of the sea combined with zingy citrus fruits and the earthy sweetness of marinated artichoke. While high-end restaurants aren't usually associated with surf 'n' turf, The octopus is fresh and tender with a faint smokiness, while the steak melted in the mouth, perfectly complementing each other. In fact, under the watchful supervision of Chef Spyros Agious, every dish on the tasting menu is cooked to exquisite perfection.
